Quick easy meal, made healthy with hidden Kale.  The smaller you cut, the less noticeable!  you could also hide shredded carrots, squash, or even fresh cilantro.

*This dish has a nice bite (green chili peppers), balanced by the cheese.  It is equally delicious cooked with beef*  Mix less monterey jack cheese for less spice.
